4 cups fresh or frozen peaches, sliced

1 cup granulated sugar (divided)

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

1/2 cup unsalted butter, melted

1 teaspoon ground cinnamon

Optional: whipped cream or vanilla ice cream for serving

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large bowl, combine the sliced peaches, 1/2 cup of the sugar, lemon juice, and vanilla extract. Toss until the peaches are well coated. Pour the mixture into a greased 9x13-inch baking dish.

      In another bowl, whisk together the flour, remaining 1/2 cup sugar, baking powder, salt, and cinnamon.

        Gradually add the milk to the dry ingredients, stirring until just combined.

          Pour the melted butter into the dry mixture, and gently stir to incorporate. The batter will be somewhat lumpy; do not overmix.

            Carefully pour the batter over the peach mixture in the baking dish. Do not stir; the batter will rise during baking.

              Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the batter comes out clean.
