Ingredients

4 boneless, skinless chicken thighs

1 cup fresh peaches, diced (about 2-3 peaches)

1/2 cup peach preserves

1/4 cup apple cider vinegar

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon onion powder

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

Fresh peach slices and cilantro for garnish (optional)

Instructions

Prepare the Marinade: In a mixing bowl, combine the diced peaches, peach preserves, apple cider vinegar, olive oil, minced garlic, smoked paprika, onion powder, dried thyme, salt, and black pepper. Blend well to create a smooth marinade.

Marinate the Chicken: Place the chicken thighs in a large resealable plastic bag or shallow dish. Pour the peach marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably 4-6 hours, to let the flavors infuse.

Preheat the Grill: Preheat your grill or grill pan to medium-high heat. If using a charcoal grill, let the coals burn down until they are covered in white ash.

Grill the Chicken: Remove the chicken from the marinade, allowing any excess to drip off. Reserve the marinade for basting. Place the chicken on the grill and cook for about 6-7 minutes per side or until the internal temperature reaches 165°F (74°C). Brush with the reserved marinade during the last 5 minutes of grilling for extra flavor.

Rest and Serve: Once cooked, transfer the chicken to a plate and let it rest for about 5 minutes. This helps retain the juices.

Garnish and Enjoy: Serve the juicy peach BBQ chicken warm, garnished with fresh peach slices and chopped cilantro if desired. Pair with your favorite grilled vegetables or a refreshing salad.
