1 ½ cups all-purpose flour

½ cup sugar

2 tsp baking powder

½ tsp baking soda

¼ tsp salt

1 large egg

½ cup sour cream

¼ cup unsalted butter, melted

1 tsp vanilla extract

1 cup fresh or frozen blueberries

1 tsp lemon zest (optional)

2 tbsp coarse sugar (for topping, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or spray with cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

      Mix Wet Ingredients: In another bowl, whisk together the egg, sour cream, melted butter, and vanilla extract until smooth and blended.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and gently fold together. Be careful not to over-mix; the batter should be slightly lumpy.
