Ingredients
  

For the Tart Crust:

1 ½ cups all-purpose flour

½ cup powdered sugar

½ cup unsalted butter, cold and cubed

1 large egg yolk

1-2 tablespoons cold water (if needed)

Pinch of salt

For the Blueberry Filling:

2 cups fresh blueberries (or frozen, if out of season)

¼ cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

1 teaspoon vanilla extract

For the Chocolate Ganache:

1 cup heavy cream

8 ounces dark chocolate, chopped (70% cacao recommended)

2 tablespoons unsalted butter

For Garnish:

Fresh blueberries

Mint leaves (optional)

Whipped cream (optional)

Instructions
 

Make the Tart Crust:

    - In a food processor, combine the flour, powdered sugar, and salt. Pulse to mix well.

      - Add the cold cubed butter and pulse until the mixture resembles coarse crumbs.

        - Add the egg yolk and process until the dough comes together. If it's too crumbly, add cold water one tablespoon at a time until it holds.

          - Press the dough into a 9-inch tart pan, making sure to evenly cover the bottom and sides. Prick the base with a fork.

            - Chill in the refrigerator for at least 30 minutes.

              Preheat the Oven:

                - Preheat your oven to 350°F (175°C).

                  Bake the Tart Crust:

                    - Once chilled, cover the tart with parchment paper and fill with pie weights or dried beans.

                      - Bake for 15 minutes, then remove the weights and parchment and bake for an additional 10-15 minutes, until lightly golden. Let it cool completely.

                        Prepare the Blueberry Filling:

                          - In a medium saucepan, combine the blueberries, sugar, lemon juice, cornstarch, and vanilla extract. Cook over medium heat, stirring gently, until the mixture begins to bubble and thicken, about 5-7 minutes.

                            - Remove from heat and let it cool slightly before pouring it into the cooled tart shell. Spread evenly.

                              Make the Chocolate Ganache:

                                - In a small saucepan, heat the heavy cream over medium heat until it begins to simmer (do not boil).

                                  - Remove from heat and add the chopped chocolate and butter. Let sit for about 2-3 minutes, then stir until smooth and glossy.

                                    Assemble the Tart:

                                      - Pour the chocolate ganache over the blueberry filling, spreading evenly to cover the berries.

                                        - Chill the tart in the refrigerator for at least 2 hours, or until the ganache is set.

                                          Serve:

                                            - Remove the tart from the fridge, garnish with fresh blueberries and mint leaves if desired. Slice and serve with a dollop of whipped cream if you like.
