Ingredients

1 lb sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter

5 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

Salt and black pepper, to taste

1 tablespoon olive oil

Optional: Fresh parsley, chopped (for garnish)

Instructions

Prep the Steak: Start by patting the steak cubes dry with paper towels. This helps achieve a good sear. Season generously with salt and pepper.

Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until shimmering.

Sear the Steak: Add the steak bites in a single layer (do this in batches if necessary to avoid overcrowding) and sear for about 3-4 minutes on each side or until they form a nice crust and are cooked to your preferred doneness (medium rare is about 130°F).

Add Garlic and Herbs: Once the steak bites are cooked, reduce the heat to medium. Add the butter to the skillet along with the minced garlic, rosemary, and thyme. Stir continuously for about 1-2 minutes until the garlic is fragrant and lightly golden.

Coat the Steak: Toss the steak bites in the garlic butter sauce, ensuring they are well-coated. Cook for an additional 1-2 minutes to absorb the flavors.

Serve: Remove from heat and transfer the steak bites to a serving platter. Drizzle with any remaining garlic butter from the pan. If desired, sprinkle with fresh parsley for garnish and serve immediately.
