Ingredients
  

2 cups cooked quinoa

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 red bell pepper, diced

½ cup red onion, finely chopped

1 avocado, diced

1 cup cherry tomatoes, halved

1 cup fresh cilantro, chopped

Juice of 2 limes

3 tablespoons olive oil

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

Tortilla chips (for serving)

Instructions
 

In a large mixing bowl, combine the cooked quinoa, black beans, corn, red bell pepper, red onion, cherry tomatoes, and cilantro.

    In a separate small bowl, whisk together the lime juice, olive oil, cumin, chili powder, salt, and pepper until well blended.

      Pour the dressing over the quinoa mixture and gently toss to combine, ensuring all ingredients are well coated.

        Carefully fold in the diced avocado, being cautious not to mash it.

          Taste and adjust seasoning if necessary, adding more lime juice, salt, or pepper as desired.

            Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld together.
