Triple Berry Cobbler Bars

For the Base and Topping:

1 ½ cups all-purpose flour

¾ cup granulated sugar

½ teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

For the Berry Filling:

1 cup fresh blueberries

1 cup fresh strawberries, hulled and sliced

1 cup fresh raspberries

¼ cup granulated sugar (adjust based on the sweetness of berries)

1 tablespoon cornstarch

2 tablespoons lemon juice

1 teaspoon vanilla extract

For Serving (optional):

Whipped cream or vanilla ice cream

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking pan or line it with parchment paper for easy removal.

    Prepare the Base: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, combine the melted butter, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined – the mixture should be thick and crumbly.

      Press into Pan: Take about two-thirds of the dough and press it evenly into the bottom of the prepared baking pan to form the base.

        Prepare the Berry Filling: In a medium bowl, gently toss together the blueberries, sliced strawberries, raspberries, sugar, cornstarch, lemon juice, and vanilla extract until the berries are well coated.

          Add Filling: Spoon the berry mixture over the crust in the baking pan, spreading it evenly across the base.

            Crumble Topping: Take the remaining one-third of the crumble mixture, and sprinkle it over the berry filling, creating a rustic, crumbly topping.

              Bake: Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the berry filling is bubbling.

                Cool and Cut: Remove from the oven and let it cool in the pan for about 20 minutes. Then, lift it out using the parchment paper if you used it, and let it cool completely on a wire rack. Cut into bars.

                  Serve: Serve warm or at room temperature, with a dollop of whipped cream or a scoop of vanilla ice cream if desired.
