Tuscan Tortellini Skillet with Sun-Dried Tomatoes

9 oz cheese tortellini (fresh or frozen)

1 cup sun-dried tomatoes, chopped (preferably in oil)

2 cups fresh spinach, roughly chopped

1 medium onion, diced

3 cloves garlic, minced

1/2 cup heavy cream

1/2 cup vegetable broth (or chicken broth)

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

2 tbsp olive oil

Fresh basil leaves for garnish

Cook the Tortellini: In a large pot, bring salted water to a boil. Cook the tortellini according to package directions until al dente. Drain and set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and red pepper flakes (if using) and cook for an additional 1-2 minutes until fragrant.

      Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes, cooking for 2 minutes to release their flavor.

        Combine Spinach and Broth: Add the fresh spinach to the skillet, and cook until wilted, about 2-3 minutes. Pour in the vegetable broth, stirring to combine.

          Create the Creamy Sauce: Reduce the heat to low, and add the heavy cream and Italian seasoning. Stir everything together and let the sauce simmer for about 3-4 minutes.
