1 lb (450g) ground beef (80/20 lean-to-fat ratio)

1 tsp kosher salt

1/2 tsp black pepper

1 tsp garlic powder

1 tsp onion powder

1 tbsp Worcestershire sauce

4 slices of sharp cheddar cheese

4 hamburger buns (preferably brioche)

4 tbsp mayonnaise

4 tbsp Dijon mustard

1 large tomato, sliced

1 cup lettuce leaves (iceberg or romaine)

1/2 red onion, thinly sliced

Pickles (optional)

Cooking oil or butter for grilling

Prepare the Patty Mixture: In a large bowl, combine the ground beef with kosher salt, black pepper, garlic powder, onion powder, and Worcestershire sauce. Mix gently with your hands until just combined; avoid overmixing to keep the burgers tender.

    Form the Patties: Divide the mixture into four equal portions. Using your hands, shape each portion into a patty about 3/4-inch thick. Make a slight indent in the center of each patty with your thumb to prevent puffing while cooking.

      Chill the Patties: Place the formed patties on a plate and refrigerate for about 30 minutes. Chilling helps the patties hold their shape and enhances their juiciness during cooking.

        Preheat the Grill or Skillet: If using a grill, heat it to medium-high heat. For stovetop cooking, preheat a cast-iron skillet over medium-high heat. Lightly oil the grill grates or skillet to prevent sticking.

          Cook the Patties: Once hot, place the patties on the grill or skillet without overcrowding. Cook the burgers for about 3-4 minutes on one side. Avoid pressing down on the patties, as it releases juices and dries them out.
