1 lb ribeye steak, thinly sliced

2 cups mushrooms, sliced (cremini or button)

1 medium onion, thinly sliced

1 medium green bell pepper, thinly sliced

4 slices provolone cheese

4 hoagie rolls or sliced baguette

2 tablespoons olive oil

2 tablespoons butter

Salt and pepper to taste

1 teaspoon garlic powder

1 teaspoon Worcestershire sauce

Fresh parsley, for garnish (optional)

Instructions
 

Prep the Ingredients: If not already done, slice the ribeye steak into very thin strips, and prepare the mushrooms, onion, and bell pepper.

    Cook the Vegetables: In a large skillet over medium heat, add 1 tablespoon of olive oil and 1 tablespoon of butter. Once melted, add the sliced onions and bell peppers. Sauté for about 5-7 minutes until softened and slightly caramelized. Add the sliced mushrooms and cook for an additional 4-5 minutes, until all vegetables are tender. Season with salt, pepper, and garlic powder. Remove from the skillet and set aside.

      Cook the Steak: In the same skillet, increase the heat to medium-high. Add the remaining tablespoon of olive oil and the prepared ribeye steak. Cook for about 3-4 minutes, stirring frequently until browned. Add Worcestershire sauce and mix well. Season to taste with salt and pepper.

        Combine Ingredients: Return the sautéed mushrooms, onions, and bell peppers back to the skillet with the steak. Stir everything together, allowing the flavors to meld for about 2 minutes.

          Melt the Cheese: Reduce the heat to low. Place the provolone cheese slices on top of the steak and vegetable mixture. Cover the skillet with a lid and let it sit for 2-3 minutes, until the cheese is melted.

            Assemble the Sandwiches: Slice the hoagie rolls or baguette lengthwise (but not all the way through). If desired, lightly toast the bread. Spoon the cheesy steak and vegetables into each roll.
