Ingredients
  

2 cups fresh strawberries, hulled and sliced

1 cup strawberry puree (about 1.5 cups of whole strawberries blended)

1/2 cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

1 teaspoon vanilla extract

1 pre-made pie crust (store-bought or homemade)

Whipped cream or vanilla ice cream for serving (optional)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a mixing bowl, combine the sliced strawberries, strawberry puree, granulated sugar, lemon juice, cornstarch, and vanilla extract. Gently fold the mixture until the strawberries are well-coated. Set aside to marinate for about 10-15 minutes, allowing the flavors to meld.

      Roll out your pie crust and transfer it to a 9-inch pie dish. Trim any excess crust hanging over the edges, and crimp the edges as desired.

        Pour the strawberry mixture into the prepared pie crust, spreading it evenly.

          Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and the filling is bubbly. If the crust edges brown too quickly, cover them with strips of aluminum foil.

            Remove from the oven and let the pie cool at room temperature for at least 1 hour before serving. This will help the filling set.

              Serve slices of the pie warm or chilled, topped with a dollop of whipped cream or a scoop of vanilla ice cream if desired.
