1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 vanilla bean, split and scraped

3 large eggs

1 cup sour cream

1 tablespoon all-purpose flour

½ cup heavy cream

¼ cup granulated sugar (for brûlée topping)

Instructions
 

Prepare the crust:

    - Preheat your oven to 325°F (160°C).

      - In a medium bowl, mix together the graham cracker crumbs, melted butter, and ¼ cup sugar until well combined and crumbly.

        - Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust layer. Bake in the preheated oven for 10 minutes, then remove and let it cool.

          Make the cheesecake filling:

            - In a large mixing bowl, beat the softened cream cheese until smooth and creamy using an electric mixer.

              - Gradually add in the 1 cup of granulated sugar, mixing until incorporated and fluffy.

                - Add the vanilla extract and the seeds from the split vanilla bean, mixing until well blended.

                  - Add the eggs, one at a time, beating well after each addition.

                    - Mix in the sour cream and flour until just combined. Be careful not to overmix.

                      Bake the cheesecake:

                        - Pour the cheesecake filling over the cooled graham cracker crust in the springform pan.
