1 cup green or brown lentils, rinsed and drained

1 medium onion, diced

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon turmeric

1/4 teaspoon red pepper flakes (adjust to taste)

1 can (14.5 oz) diced tomatoes, with juices

6 cups vegetable broth

2 cups fresh spinach or kale

2 tablespoons olive oil

Salt and pepper, to taste

Fresh lemon juice, for serving

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened and the onion is translucent.

    Add Garlic and Spices: Stir in the minced garlic, cumin, smoked paprika, turmeric, and red pepper flakes. Cook, stirring frequently, for about another minute until fragrant.
