1/4 cup milk (or dairy alternative)

1 cup fresh spinach, chopped

1/2 bell pepper (red or yellow), diced

1/4 cup red onion, finely chopped

1 small carrot, grated

1/4 cup cherry tomatoes, halved

1/4 cup feta cheese, crumbled (optional)

Salt and pepper, to taste

4 whole wheat tortillas (or wraps of your choice)

2 tablespoons olive oil or butter

Fresh herbs (like basil or cilantro), for garnish (optional)

Whisk the Eggs: In a mixing bowl, whisk together the eggs and milk until well combined. Season with salt and pepper to taste.

    Sauté the Veggies: Heat 1 tablespoon of olive oil or butter in a non-stick skillet over medium heat. Add the diced bell pepper, red onion, and grated carrot. Sauté for about 3-4 minutes, until the vegetables are soft.
