2 heads of garlic

1 tablespoon olive oil

8 ounces fettuccine pasta

1 cup heavy cream

1 cup whole milk

1 cup freshly grated Parmesan cheese

4 tablespoons unsalted butter

1 teaspoon sea salt

½ teaspoon freshly cracked black pepper

½ teaspoon nutmeg (optional for warmth)

Fresh parsley, chopped (for garnish)

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the tops off the garlic heads to expose the cloves, drizzle with olive oil, wrap in aluminum foil, and roast for 30-35 minutes until tender and caramelized. Let cool before squeezing out the cloves.

    Cook the Fettuccine: Bring a large pot of salted water to a boil. Cook the fettuccine according to package instructions until al dente. Reserve ½ cup of pasta water, then drain the fettuccine and set aside.

      Prepare the Sauce: In a large saucepan over medium heat, melt the butter. Add the roasted garlic cloves, pressing them into the pan for maximum flavor. Stir in the heavy cream and whole milk, bringing it to a gentle simmer.
