1 cup all-purpose flour

1 cup cornmeal

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk (or milk with 1 tablespoon of lemon juice mixed in)

1/4 cup unsalted butter, melted

2 large eggs

1/2 cup honey

1/4 cup corn kernels (fresh, frozen, or canned)

1/2 cup shredded cheddar cheese (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease or line an 8x8-inch baking dish or a similarly sized cast iron skillet with parchment paper for easy removal.

    Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, cornmeal, sugar, baking powder, and salt until well combined.

      Prepare Wet Ingredients: In another bowl, whisk together the buttermilk, melted butter, eggs, and honey until smooth. Ensure the mixture is well blended and creamy.

        Combine Ingredients: Pour the wet ingredients into the bowl of dry ingredients. Gently fold together using a spatula until just combined. Be careful not to overmix; lumps are okay!

          Add Corn and Cheese: Gently fold in the corn kernels and shredded cheddar cheese, if using.
