4 sheets of nori (seaweed)

2 cups sushi rice

2 1/2 cups water

1/4 cup rice vinegar

2 tablespoons sugar

1 teaspoon salt

1 large cucumber, julienned

1 large avocado, sliced

1 cup cooked crab meat or imitation crab

1/2 cup pickled ginger

1 tablespoon sesame seeds

Soy sauce and wasabi for serving

Instructions
 

Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a pot, bring to a boil, then reduce to low, cover, and simmer for 20 minutes. Once cooked, remove from heat and let it sit covered for 10 minutes.

    Season the Rice: In a small saucepan, combine rice vinegar, sugar, and salt over low heat until dissolved. Stir this mixture into the cooked rice, spreading it on a large plate to cool down.

      Assemble the Sandwich: Lay a sheet of nori, shiny side down, on a bamboo sushi mat or a clean surface. Wet your hands to prevent sticking and spread a thin layer of sushi rice (about 1/2 inch thick) over the nori, leaving a 1-inch border at the top.

        Add Fillings: On top of the rice, arrange slices of cucumber, avocado, and crab meat. Sprinkle some sesame seeds and add a few pieces of pickled ginger for extra flavor.

          Roll it Up: Using the mat, carefully roll the nori away from you, pressing gently but firmly to tighten the roll. Seal the edge of the nori with a bit of water.

            Slice & Serve: Cut the sushi sandwich into bite-sized pieces with a sharp knife. Serve with soy sauce and wasabi for dipping.

              Repeat: Repeat the process for the remaining sheets of nori and enjoy your sushi sandwiches fresh!
