Ingredients

1 cup popcorn kernels, popped

1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/2 teaspoon garlic powder

1 cup shredded sharp cheddar cheese

1/4 cup sugar (optional, for sweetness)

2 large eggs

1 cup milk

1/4 cup unsalted butter, melted

2 tablespoons honey (optional, for sweetness)

Instructions

Prepare the Popcorn: Start by popping the popcorn kernels using your preferred method (air popper, stovetop, or microwave). Once ready, set aside.

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease an 8-inch square baking pan or line it with parchment paper for easier removal.

Mix Dry Ingredients: In a large mixing bowl, combine the cornmeal, all-purpose flour, baking powder, salt, garlic powder, and sugar (if using). Stir well until the dry ingredients are evenly mixed.

Incorporate Cheese: Fold in the shredded cheddar cheese into the dry mixture, ensuring it is evenly distributed.

Mix Wet Ingredients: In a separate bowl, whisk together the eggs, milk, melted butter, and honey (if using) until they are well combined.

Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to over-mix; the batter should be lumpy.

Add Popcorn: Carefully fold in the popped popcorn into the mixture. Ensure that it is evenly incorporated without breaking the popcorn too much.

Pour into Pan: Transfer the batter into the prepared baking pan, spreading it evenly.

Bake: Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and a toothpick inserted in the center of the cornbread comes out clean.

Cool & Serve: Once baked, remove the cornbread from the oven and allow it to cool in the pan for about 5 minutes. Then transfer to a wire rack to cool slightly before slicing. Serve warm and enjoy the delightful buttery cheddar flavor combined with the crunch of popcorn!
