Watermelon & Beef Salad Bowl

2 cups watermelon, cubed (seedless)

1 lb flank steak or sirloin, thinly sliced

2 cups mixed greens (arugula, spinach, and kale)

1/2 red onion, thinly sliced

1/2 cup crumbled feta cheese

1/4 cup fresh mint leaves, chopped

1/4 cup fresh basil leaves, chopped

1/4 cup olive oil

2 tablespoons balsamic vinegar

1 tablespoon honey

Salt and pepper, to taste

1/4 teaspoon red pepper flakes (optional)

1 avocado, sliced (for garnish)

Marinate the Beef: In a bowl, combine the olive oil, balsamic vinegar, honey, salt, pepper, and red pepper flakes (if using). Add the sliced beef and toss to coat. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

    Cook the Beef: Heat a grill or grill pan over medium-high heat. Remove the beef from the marinade and cook for about 2-3 minutes on each side, or until cooked to your desired level of doneness. Allow it to rest for a few minutes before slicing it into bite-sized pieces.

      Prepare the Salad Base: In a large bowl, combine the mixed greens, watermelon cubes, sliced red onion, fresh mint, and basil leaves. Toss gently to mix.
