1/4 cup honey

4 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon apple cider vinegar

1 tablespoon Dijon mustard

1 tablespoon olive oil

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

1/2 teaspoon red pepper flakes (optional, for heat)

Prepare the Marinade: In a bowl, whisk together honey, minced garlic, soy sauce, apple cider vinegar, Dijon mustard, olive oil, salt, black pepper, smoked paprika, and red pepper flakes. This will be your marinade and glaze.

    Marinate the Pork Chops: Place the pork chops in a resealable plastic bag or a shallow dish. Pour half of the marinade over the chops, ensuring they are well coated. Reserve the other half for later. Seal or cover and refrigerate for at least 30 minutes, or up to 2 hours for best flavor.

      Cook the Pork Chops: Preheat your grill or skillet over medium-high heat. If using a skillet, add a splash of olive oil to the pan. Remove the pork chops from the marinade and discard the marinade used for marinating. Place the chops on the grill or skillet.

        Sear the Chops: Cook the pork chops for about 4-5 minutes on each side, or until they have golden brown grill marks or are nicely seared in the skillet and the internal temperature reaches 145°F (63°C).

          Glaze the Pork Chops: In the last 2 minutes of cooking, use the reserved marinade to glaze the pork chops. Brush the marinade generously over the top of the chops and let it caramelize slightly as they finish cooking.
