1 lb (450g) boneless, skinless chicken breasts

1 cup quinoa, rinsed

2 cups low-sodium chicken broth or water

1 tablespoon olive oil

1 teaspoon chipotle chili powder

1 teaspoon smoked paprika

1 teaspoon ground cumin

2 cloves garlic, minced

1 tablespoon lime juice

Salt and pepper, to taste

1 cup black beans, drained and rinsed

1 cup corn (fresh or frozen)

1 red bell pepper, diced

1 avocado, sliced

1/4 cup fresh cilantro, chopped

1/2 cup cherry tomatoes, halved

Lime wedges for serving

Instructions
 

Prepare the Quinoa:

    In a medium saucepan, combine rinsed quinoa and chicken broth (or water). Bring to a boil over high heat, then reduce the heat to low, cover, and let simmer for about 15 minutes, or until the liquid is absorbed and the quinoa is fluffy. Once done, fluff it with a fork and set aside.

      Marinate the Chicken:

        In a small bowl, mix olive oil, chipotle chili powder, smoked paprika, ground cumin, minced garlic, lime juice, salt, and pepper. Coat the chicken breasts evenly with the marinade and let them sit for at least 15 minutes. For best results, marinate for a couple of hours in the refrigerator.

          Cook the Chicken:

            Heat a grill pan or skillet over medium-high heat. Cook the chicken breasts for 6-8 minutes per side or until the internal temperature reaches 165°F (75°C) and the chicken is nicely browned. Remove from the heat and let rest for a few minutes before slicing.

              Combine the Ingredients:

                In a large bowl, mix the cooked quinoa, black beans, corn, diced red bell pepper, and cherry tomatoes. Season with salt, pepper, and additional lime juice if desired. Toss gently to combine.

                  Assemble the Bowls:

                    Divide the quinoa mixture into serving bowls. Top each bowl with slices of grilled chicken and avocado. Garnish with chopped cilantro and serve with lime wedges on the side for an extra zesty kick.
