1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

Zest and juice of 1 large lemon

2 tablespoons olive oil

1 teaspoon red pepper flakes (adjust for spice preference)

For the Quinoa:

1 cup quinoa, rinsed

2 cups low-sodium vegetable or chicken broth

1 tablespoon olive oil

Salt, to taste

For the Veggies:

1 bell pepper (any color), diced

1 cup cherry tomatoes, halved

1 zucchini, diced

Juice of 1 lime

Salt and pepper, to taste

Cook the Quinoa:

    - In a medium saucepan, combine the rinsed quinoa and broth. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let sit for 5 minutes before fluffing with a fork.

      Sauté the Vegetables:
