Ingredients

8 oz linguine or spaghetti

1 lb shrimp, peeled and deveined

4 cloves garlic, minced

1/4 cup olive oil

1 lemon, zested and juiced

1/2 tsp red pepper flakes (adjust for heat preference)

1/2 cup chicken or vegetable broth

1/4 cup fresh parsley, chopped

Salt and pepper, to taste

Grated Parmesan cheese, for serving (optional)

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the linguine or spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Sauté the Shrimp: In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and red pepper flakes, and sauté for about 30 seconds until fragrant.

Add the Shrimp: Add the shrimp to the skillet, season with salt and pepper, and cook for 2-3 minutes until they turn pink and opaque.

Mix in Flavor: Pour in the chicken or vegetable broth, lemon juice, and lemon zest. Let it simmer for about 2 minutes to let the flavors meld.

Combine Pasta and Sauce: Add the drained pasta to the skillet and toss to combine, ensuring the pasta is coated with the sauce. If the pasta seems dry, add a bit of the reserved pasta water until you reach your desired consistency.

Finish with Freshness: Stir in the chopped parsley and adjust seasoning with more salt and pepper, if necessary.

Serve: Plate the pasta and shrimp, garnishing with additional parsley and grated Parmesan cheese if desired. Enjoy!
