Zesty Lime Chicken Bowls

1 lb boneless, skinless chicken breasts

2 limes (juiced and zested)

3 cloves garlic (minced)

2 tbsp honey

2 tbsp olive oil

1 tsp cumin

1 tsp smoked paprika

Salt and pepper to taste

1 cup quinoa (rinsed)

2 cups vegetable or chicken broth

1 cup cherry tomatoes (halved)

1 avocado (sliced)

1 cup black beans (drained and rinsed)

1 cup corn (fresh or frozen)

½ cup fresh cilantro (chopped)

1 jalapeño (thinly sliced, optional)

Marinate the Chicken: In a large bowl, whisk together the lime juice, lime zest, minced garlic, honey, olive oil, cumin, smoked paprika, salt, and pepper. Add the chicken breasts to the bowl, coating them thoroughly. Cover and marinate in the refrigerator for at least 30 minutes or up to 2 hours for more flavor.

    Cook the Quinoa: While the chicken is marinating, bring the vegetable or chicken broth to a boil in a medium saucepan. Add the rinsed quinoa, lower the heat, cover, and simmer for about 15 minutes or until all the liquid is absorbed. Remove from heat and let it sit covered for an additional 5 minutes before fluffing with a fork.

      Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade (discard any leftover marinade) and cook for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown.
