Zesty Lime Chicken & Rice Lettuce Wraps

1 lb boneless, skinless chicken thighs

1 cup brown rice, cooked

2 tbsp olive oil

3 cloves garlic, minced

1 red bell pepper, diced

1 cup corn (fresh, frozen, or canned)

1 cup black beans, rinsed and drained

Zest and juice of 2 limes

1 tsp ground cumin

1 tsp smoked paprika

Salt and pepper to taste

1 head of butter lettuce or romaine lettuce, leaves separated

½ cup fresh cilantro, chopped

½ avocado, diced (for topping)

Lime wedges (for garnish)

Instructions
 

Prepare the Chicken: In a bowl, combine the chicken thighs with olive oil, minced garlic, lime zest, lime juice, cumin, smoked paprika, salt, and pepper. Allow it to marinate for at least 30 minutes (the longer, the better for flavor!).

    Cook the Chicken: Preheat a skillet over medium-high heat. Once hot, add the marinated chicken to the skillet. Cook for about 6-7 minutes on each side, or until the chicken is cooked through and has a lovely golden-brown crust. Remove from heat and let it rest for 5 minutes before slicing it into thin strips.

      Prepare the Filling: In the same skillet (you can wipe it down if needed), add the diced red bell pepper and corn. Sauté for 3-4 minutes until the pepper softens. Add the cooked brown rice and black beans to the skillet, mixing well to combine. Add a splash of lime juice, salt, and pepper to taste, and stir until everything is heated through.

        Assemble the Wraps: Take a large lettuce leaf and place a generous spoonful of the rice and bean mixture in the center. Top with sliced chicken, chopped cilantro, and diced avocado.

          Serve: Roll the lettuce wrap around the filling like a taco, and secure it if needed with a toothpick. Serve with extra lime wedges on the side for an extra zesty kick!
