1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

Zest of 1 lime

Juice of 2 limes

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

Fresh cilantro, finely chopped (for garnish)

For the Slaw:

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 medium carrot, grated

1/4 cup fresh cilantro, chopped

1 tablespoon apple cider vinegar

1 tablespoon lime juice

1 tablespoon honey

Salt and pepper, to taste

For Serving:

8 small corn tortillas

Lime wedges (for garnish)

Additional cilantro (for garnish)

Marinate the Shrimp: In a large mixing bowl, combine olive oil, minced garlic, lime zest, lime juice, smoked paprika, ground cumin, cayenne pepper, salt, and pepper. Add the shrimp, toss to coat evenly, and let it marinate for at least 15 minutes (up to 30 minutes for more flavor).

    Prepare the Slaw: In another bowl, combine green cabbage, red cabbage, grated carrot, and chopped cilantro. In a separate small bowl, whisk together apple cider vinegar, lime juice, honey, salt, and pepper. Pour the dressing over the cabbage mixture and toss to combine. Set aside.

      Cook the Shrimp: Heat a large skillet over medium-high heat. Add the marinated shrimp in a single layer and cook for about 2-3 minutes on one side, until they turn pink and opaque. Flip and cook for an additional 1-2 minutes on the other side. Remove from heat.

        Warm the Tortillas: In a dry skillet, warm the corn tortillas for about 30 seconds on each side until pliable. Alternatively, you can wrap them in a damp paper towel and microwave for about 20-30 seconds.

          Assemble the Tacos: On each warm tortilla, add a few shrimp followed by a generous scoop of the cabbage slaw. Top with fresh cilantro and a squeeze of lime juice.
