Ingredients

1 cup grated zucchini (excess moisture squeezed out)

1 cup grated carrots

1/2 cup chopped bell peppers (any color)

1/2 cup finely chopped onion

1/2 cup corn kernels (fresh or frozen)

1 cup breadcrumbs (preferably whole wheat)

1/2 cup grated Parmesan cheese

2 large eggs

2 tablespoons fresh parsley, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

Olive oil or cooking spray for frying

Optional: Fresh lemon wedges for serving

Instructions

Prepare the Veggies: In a large mixing bowl, combine the grated zucchini, grated carrots, chopped bell peppers, chopped onion, and corn kernels. Ensure to squeeze out any excess moisture from the zucchini to prevent sogginess in the fritters.

Mix Dry Ingredients: In a separate bowl, combine breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper. Stir well to blend the seasonings evenly with the breadcrumbs.

Combine Everything: Add the dry mixture to the bowl of veggies. Crack in the eggs and add the chopped parsley. Mix everything together until well combined. The mixture should hold together but remain slightly crumbly.

Form Fritters: With your hands, take a handful of the mixture and form small patties (about 2-3 inches in diameter). Place them on a plate or parchment-lined baking sheet as you go.

Heat the Pan: In a large skillet, heat a generous amount of olive oil over medium heat. If using cooking spray, coat the skillet evenly to allow the fritters to crisp up beautifully.

Fry the Fritters: Once the oil is hot, carefully place the fritters in the skillet, making sure not to overcrowd the pan. Cook for about 4-5 minutes on each side, or until golden brown and crispy. You may need to adjust the heat to ensure they do not burn.

Drain Excess Oil: Once cooked, transfer the fritters to a plate lined with paper towels to absorb any excess oil.

Serve: Arrange the fritters on a serving platter and optionally serve with fresh lemon wedges for a zesty kick. They pair wonderfully with a yogurt dip or a spicy aioli.
