1 pound large shrimp, peeled and deveined

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1 bell pepper (red or yellow), diced

1 jalapeño, seeded and minced (optional for heat)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons olive oil

1 teaspoon honey

1 teaspoon garlic powder

Salt and pepper, to taste

Mixed greens (optional, for serving)

Prepare the Shrimp: In a large skillet over medium heat, add 1 tablespoon of olive oil. Season the shrimp with garlic powder, salt, and pepper. Cook for 2-3 minutes on each side until they are pink and opaque. Remove from heat and set aside to cool.
