2 medium zucchinis, grated and excess moisture squeezed out

1 cup shredded cheddar cheese

1/2 cup all-purpose flour

1/4 cup grated Parmesan cheese

2 large eggs

1/4 cup chopped fresh parsley (or 1 tablespoon dried)

2 cloves garlic, minced

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon paprika (optional for a kick)

Oil for frying (olive oil or vegetable oil)

Prepare the Zucchini: Start by grating the zucchinis. Use a clean kitchen towel or cheesecloth to squeeze out as much moisture as possible. This step is crucial for preventing soggy patties.

    Mix the Ingredients: In a large mixing bowl, combine the grated zucchini, shredded cheddar cheese, all-purpose flour, grated Parmesan cheese, and chopped parsley. Stir in the minced garlic, onion powder, salt, black pepper, and paprika if using.

      Add the Eggs: Crack the eggs into the bowl with the zucchini mixture. Mix everything together until well combined. The mixture should be thick and hold together when formed into a patty. If it seems too wet, add a bit more flour.

        Form Patties: Using your hands, shape the mixture into patties about 3 inches in diameter and 1/2 inch thick. You should have around 10-12 patties depending on the size.

          Heat the Oil: In a large skillet, heat about 1/4 inch of oil over medium heat. You can check if the oil is hot enough by dropping a small piece of batter into it; it should sizzle immediately.

            Fry the Patties: Carefully add several patties to the hot oil (don’t overcrowd the pan) and fry for about 3-4 minutes on each side, or until golden brown and crispy. Use a spatula to flip them gently.
