2 medium zucchinis, grated

2 cups fresh basil leaves, packed

1/3 cup pine nuts (or walnuts)

2 cloves garlic, minced

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1/2 cup extra-virgin olive oil

Salt and pepper to taste

4 slices of crusty bread (sourdough or whole grain recommended)

Optional: Cherry tomatoes, halved, for garnish

Prepare the Zucchini: Grate the zucchinis using a box grater or a food processor. Place the grated zucchini in a clean kitchen towel and squeeze to remove excess moisture. This will prevent your pesto from becoming watery.
