Ingredients

2 cups rolled oats

1 cup shredded zucchini (about 1 small zucchini)

1 cup fresh or frozen blueberries

1/2 cup milk (dairy or non-dairy)

1/2 cup Greek yogurt or non-dairy yogurt

1/4 cup maple syrup or honey

2 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon baking powder

1/4 teaspoon salt

Optional toppings: chopped nuts, extra blueberries, or a sprinkle of coconut flakes

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish or line it with parchment paper for easy removal.

Prepare the Wet Ingredients: In a large mixing bowl, whisk together the milk, Greek yogurt, maple syrup, eggs, and vanilla extract until smooth and well combined.

Combine Dry Ingredients: In another bowl, mix the rolled oats, cinnamon, baking powder, and salt until evenly distributed.

Incorporate Zucchini and Blueberries: Fold the shredded zucchini and blueberries into the wet ingredients. Then gradually stir in the dry oats mixture until everything is combined. The batter should be thick but pourable.

Pour and Spread: Pour the mixture into the prepared baking dish, spreading it evenly.

Add Optional Toppings: If desired, sprinkle chopped nuts or additional blueberries on top for added texture and flavor.

Bake: Place the dish in the preheated oven and bake for 30-35 minutes, or until the oatmeal is set and slightly golden on top.

Cool and Serve: Allow it to cool for about 10 minutes before slicing. Serve warm as is, or with a drizzle of extra maple syrup or a dollop of yogurt on top.
