2 medium zucchinis, grated

1 cup cooked and shredded chicken breast

1 cup rolled oats

½ cup whole wheat flour

½ cup shredded coconut

1 large egg

1 tsp vanilla extract

½ cup honey or maple syrup

1 tsp baking powder

½ tsp baking soda

1 tsp cinnamon

¼ tsp salt

Optional: ¼ cup chocolate chips or nuts for added texture

Preheat the Skillet: Heat a large non-stick skillet over medium heat, allowing it to warm up for about 5 minutes while you prepare the cookie mix.

    Combine Wet Ingredients: In a large bowl, whisk together the grated zucchini, egg, honey (or maple syrup), and vanilla extract until well combined.

      Mix Dry Ingredients: In another bowl, combine the rolled oats, whole wheat flour, shredded coconut, baking powder, baking soda, cinnamon, and salt. Mix thoroughly to ensure even distribution of dry ingredients.

        Combine Mixtures: Gradually add the dry mixture into the wet ingredients, stirring until just combined. Be careful not to overmix. If you’re adding chocolate chips or nuts, fold them in at this stage.
