2 cups grated zucchini (about 2 medium zucchinis)

1 cup all-purpose flour

1/2 cup whole wheat flour

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1/2 cup vegetable oil (or melted coconut oil)

2 large eggs

1 teaspoon vanilla extract

1/2 cup chopped nuts (such as walnuts or pecans)

1/2 cup chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease or line a muffin tin with paper liners.

    Prepare the Zucchini: Grate the zucchini using a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out any excess moisture. This step is crucial to prevent soggy muffins.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

        Mix Wet Ingredients: In another bowl, combine the brown sugar, granulated sugar, and vegetable oil. Mix in the eggs one at a time, followed by the vanilla extract. Make sure everything is well blended.
