2 cups grated zucchini (about 2 medium zucchinis)

1 ½ cups all-purpose flour

1 cup rolled oats

¾ cup brown sugar, packed

½ cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

1 tsp vanilla extract

1 tsp baking soda

½ tsp baking powder

½ tsp cinnamon

¼ tsp salt

1 cup chocolate chips (optional)

1 cup cream cheese, softened (for frosting)

½ cup powdered sugar (for frosting)

1 tsp lemon juice (for frosting)

Fresh fruit slices (banana, strawberries, kiwi, etc., for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper or grease it lightly.

    Prepare the Zucchini: Grate the zucchini using a box grater. Place the grated zucchini in a clean kitchen towel, twist, and squeeze to remove some of the excess moisture. Set aside.

      Mix Wet Ingredients: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the eggs and vanilla extract, mixing well until incorporated.

        Combine Dry Ingredients: In another bowl, whisk together the flour, rolled oats, baking soda, baking powder, cinnamon, and salt.
