2 medium zucchinis, shredded

1 cup almond flour (or any gluten-free flour)

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper to taste

1 cup fresh mozzarella cheese, sliced

1/2 cup cheddar cheese, shredded

Butter or olive oil for frying

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Zucchini: In a large bowl, combine the shredded zucchini with a pinch of salt. Let it sit for about 10 minutes to draw out moisture. After 10 minutes, use a clean kitchen towel to squeeze out excess moisture from the zucchini.

      Mix the Crust Ingredients: In the same bowl with the drained zucchini, add the almond flour, mozzarella cheese, Parmesan cheese, eggs, garlic powder, onion powder, dried oregano, salt, and pepper. Mix well until all ingredients are combined and form a thick batter.

        Spread the Zucchini Mixture: Spread the zucchini mixture evenly onto the prepared baking sheet, shaping it into a rectangle about 1/4 inch thick. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the crust is firm to the touch.

          Prepare the Cheese Filling: While the crust is baking, slice the fresh mozzarella and shred the cheddar cheese.

            Assemble the Squares: Once the crust is baked, remove it from the oven and let it cool slightly. Cut the crust into squares (about 2x2 inches), then place a slice of fresh mozzarella and some shredded cheddar on top of half of the squares. Top with another square to create a sandwich.

              Grill the Cheese Squares: In a large skillet, heat a tablespoon of butter or olive oil over medium heat. Carefully place the assembled cheese squares in the skillet and grill for about 3-4 minutes on each side or until golden and the cheese is melted.
