2 medium zucchinis, sliced thinly (about 2 cups)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1 cup marinara sauce (plus more for serving)

8 small whole wheat tortillas

1/2 cup grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper to taste

Olive oil spray or cooking oil

Prepare the Zucchini: Begin by preheating your oven to 400°F (200°C). Slice the zucchinis thinly and lay them out on a baking sheet. Lightly spray with olive oil and season with salt, pepper, and oregano. Roast in the oven for 15 minutes until tender.

    Mix the Cheese Filling: In a mixing bowl, combine the ricotta cheese, 1/2 cup of mozzarella cheese, garlic powder, and a pinch of salt and pepper. Mix until well combined.

      Assemble the Quesadillas: On one tortilla, spread about 2 tablespoons of marinara sauce. Layer with roasted zucchini slices, a generous dollop of the cheese mixture, and top with a sprinkle of grated Parmesan cheese. Add another tortilla on top.

        Cook the Quesadillas: Heat a non-stick skillet over medium heat. Add a little cooking oil or spray. Once hot, carefully place the assembled quesadilla in the skillet. Cook for about 3-4 minutes until the bottom is golden brown. Flip and cook the other side for another 3-4 minutes until crispy and the cheese has melted.

          Cut and Serve: Remove the quesadilla from the skillet and let it cool for a minute. Cut into wedges and serve with extra marinara sauce for dipping.
