3 large zucchinis, sliced thinly (use a mandolin for even cuts)

1 pound ground turkey (or beef for a richer flavor)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1 cup marinara sauce (homemade or store-bought)

1 cup fresh spinach, chopped

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

Fresh basil leaves, for garnish

Prepare the Zucchini: Sprinkle the zucchini slices with salt and let them sit for about 20 minutes to draw out excess moisture. After 20 minutes, pat the slices dry with a paper towel.

    Cook the Ground Turkey: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the ground turkey and cook, breaking it apart with a spoon, until browned. Season with oregano, basil, salt, and pepper. Once cooked through, stir in the marinara sauce and let it simmer for about 5-7 minutes. Remove from heat.

      Prepare the Ricotta Mixture: In a bowl, combine ricotta cheese with chopped spinach. Season with a pinch of salt and pepper.

        Assemble the Salad Bowl: In individual bowls or a large serving dish, layer the ingredients: Start with a layer of zucchini slices, followed by a scoop of the turkey marinara mixture, then a dollop of the ricotta mixture. Repeat the layers until the ingredients are used up, finishing with a layer of zucchini on top.

          Add Cheese and Bake: Top the final layer of zucchini with shredded mozzarella cheese. Preheat the oven to 375°F (190°C) and bake for about 25-30 minutes, until the cheese is melted and bubbly.
