3 medium zucchinis, sliced lengthwise into 1/4-inch thick strips

1 cup ricotta cheese

1 cup shredded mozzarella cheese (plus extra for topping)

1/2 cup grated Parmesan cheese

1 egg

2 cups marinara sauce (store-bought or homemade)

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Prepare the Zucchini: Preheat your oven to 375°F (190°C). Arrange the zucchini strips on a clean surface and sprinkle lightly with salt. Let them sit for about 10-15 minutes to draw out moisture, then pat dry with a paper towel.

    Make the Filling: In a mixing bowl, combine the ricotta cheese, 1 cup of mozzarella, Parmesan, egg, minced garlic, dried oregano, and dried basil. Season with salt and pepper to taste. Mix thoroughly until well combined.

      Assemble Roll-Ups: Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish. Take one zucchini strip and place a heaping tablespoon of the cheese mixture at one end. Roll it up tightly and place seam-side down in the baking dish. Repeat with the remaining zucchini strips.

        Add Sauce and Cheese: Once all the roll-ups are in the dish, pour the remaining marinara sauce over the top. Sprinkle the extra mozzarella cheese evenly over the sauce.

          Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbling and golden brown.
