3 medium zucchini, sliced lengthwise into thin sheets

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 egg, lightly beaten

2 cups marinara sauce (store-bought or homemade)

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

Fresh basil leaves for garnish

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Zucchini: Lightly salt the zucchini slices and place them on a paper towel to drain excess moisture for about 15 minutes. This helps prevent a soggy lasagna roll.

      Make the Filling: In a medium bowl, combine the ricotta cheese, half of the mozzarella cheese, Parmesan cheese, beaten egg, minced garlic, oregano, salt, and black pepper. Mix until well combined.

        Blanch Zucchini (optional): For a softer texture, you can blanch the zucchini slices in boiling water for 1-2 minutes. Drain and place them on a clean towel to cool.

          Assemble the Rolls: Spread a thin layer of marinara sauce at the bottom of a baking dish. Take a zucchini slice, spread about 2 tablespoons of the ricotta filling along one end, and roll it up. Place the zucchini roll seam-side down in the baking dish. Repeat with remaining slices and filling.

            Add Sauce: Once all the rolls are in the dish, pour the remaining marinara sauce over the zucchini rolls. Sprinkle the remaining mozzarella cheese on top.

              Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.

                Garnish and Serve: Once out of the oven, let the dish cool for a few minutes. Garnish with fresh basil leaves before serving.
