Zucchini Nacho Boats with Cheddar

4 medium zucchinis

1 cup shredded sharp cheddar cheese

1 cup cooked ground beef or shredded chicken (optional for a vegetarian option)

1/2 cup black beans, drained and rinsed

1/2 cup corn kernels (canned or frozen)

1/2 cup diced tomatoes (fresh or canned)

1 small onion, diced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper, to taste

1/4 cup chopped fresh cilantro (optional)

1/2 cup sour cream or Greek yogurt for topping

1 jalapeño, sliced (optional for extra heat)

Lime wedges for serving

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Zucchini: Slice each zucchini in half lengthwise and scoop out some of the center using a spoon to create a boat shape. Leave about 1/4 inch of zucchini flesh to support the filling.

      Cook the Filling: In a large skillet over medium heat, add a splash of olive oil. Sauté the diced onion until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.

        Combine the Filling Ingredients: Stir in the ground beef (if using), black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper. Cook for about 5 minutes until heated through and well combined.

          Fill the Zucchini Boats: Place the zucchini boats on a baking sheet lined with parchment paper. Spoon the filling mixture evenly into each boat, packed generously.

            Add Cheese: Sprinkle shredded cheddar cheese over the top of each filled zucchini boat.

              Bake: Place the baking sheet in the oven and bake for 20-25 minutes, or until the zucchinis are tender and the cheese is melted and bubbly.
