3 medium zucchinis, spiralized (or thinly sliced)

1 pound ground turkey or beef

2 cups ricotta cheese

1 large egg

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

3 cups marinara sauce (homemade or store-bought)

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Prepare Zucchini: If using spiralized zucchini, place it in a colander, sprinkle with salt, and let it sit for 20 minutes to draw out excess moisture. If using slices, pat them dry with paper towels.

    Cook the Meat: In a large skillet over medium heat, add the ground turkey or beef. Sauté until browned and cooked through, about 5-7 minutes. Drain any excess fat. Add minced garlic, oregano, basil, salt, and pepper. Cook for another 2 minutes until fragrant.

      Prepare the Ricotta Mixture: In a bowl, combine ricotta cheese, egg, half of the grated Parmesan cheese, salt, and pepper. Mix well until smooth.

        Assemble the Lasagna:

          - Preheat the oven to 375°F (190°C).

            - In a 9x13 inch baking dish, spread a thin layer of marinara sauce on the bottom.

              - Layer half of the zucchini noodles over the sauce.

                - Spread half of the ricotta mixture over the noodles.

                  - Top with half of the meat mixture.

                    - Pour a third of the marinara sauce over the meat.

                      - Sprinkle with a third of the mozzarella cheese.

                        - Repeat the layers with the remaining ingredients, finishing with marinara sauce topped with the remaining mozzarella and Parmesan cheese.

                          Bake the Lasagna: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for another 15 minutes, or until the cheese is bubbly and golden.

                            Let it Rest: Remove the lasagna from the oven and allow it to rest for 10-15 minutes before slicing. This helps the layers set.

                              Serve: Garnish with fresh basil leaves, slice, and enjoy your healthy zucchini noodle lasagna!
