Ingredients

2 medium zucchinis

1 cup grated Parmesan cheese

1 cup breadcrumbs (panko is preferred for extra crunch)

2 large eggs

1 teaspoon garlic powder

1 teaspoon Italian seasoning

½ teaspoon salt

½ teaspoon black pepper

Olive oil spray

Fresh parsley, chopped (for garnish)

Instructions

Preheat the oven: Start by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the zucchini: Wash and dry the zucchinis. Slice them into thin rounds, about ¼ inch thick. To remove excess moisture, sprinkle the slices lightly with salt and place them on a paper towel for about 15 minutes. Pat them dry afterward.

Set up the dredging station: In one bowl, beat the eggs. In another bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.

Coat the zucchini slices: Dip each zucchini slice first into the beaten eggs, allowing the excess to drip off. Then coat them in the breadcrumb mixture, pressing lightly to ensure they stick well.

Arrange on the baking sheet: Place the coated zucchini crisps in a single layer on the prepared baking sheet. For the best crisp, try to ensure they aren’t touching. Lightly spray the tops with olive oil for added crispiness.

Bake to perfection: Bake in the preheated oven for 20-25 minutes, flipping halfway through, until both sides are golden brown and crispy.

Garnish and serve: Once done, remove from the oven and let them cool for a few minutes. Garnish with freshly chopped parsley before serving for a pop of color and flavor.

Enjoy: Serve your Crispy Zucchini Parm Bites warm as a delightful appetizer or snack, paired with marinara sauce or your favorite dipping sauce!
