2 ripe avocados

2 cloves garlic, minced

1/4 cup fresh basil leaves

2 tablespoons lemon juice

1/4 cup extra virgin olive oil

Salt and pepper, to taste

Cherry tomatoes, halved (for garnish)

Crushed red pepper flakes (optional, for garnish)

Pine nuts or walnuts, toasted (for garnish)

Instructions
 

Prep the Zucchini: Using a spiralizer or a vegetable peeler, create zucchini noodles (zoodles). If using a peeler, aim for thin, wide ribbons. Set them aside in a large bowl.

    Make the Creamy Avocado Sauce:

      - In a food processor or blender, combine the ripe avocados, minced garlic, fresh basil leaves, lemon juice, and a pinch of salt and pepper.

        - Blend until smooth and creamy. Gradually add the extra virgin olive oil while continuing to blend. If the sauce is too thick, add a tablespoon of water until you reach your desired consistency.
