Zucchini Pita Pizzas

2 medium zucchinis, sliced into 1/4 inch rounds

4 whole wheat pitas

1 cup marinara sauce (or your favorite pizza sauce)

1 cup shredded mozzarella cheese

1/2 cup cherry tomatoes, halved

1/4 cup black olives, sliced

1/4 cup red onion, thinly sliced

1 teaspoon Italian seasoning (dried oregano and basil)

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Zucchini: In a mixing bowl, drizzle the sliced zucchini rounds with olive oil, and season with salt, pepper, and Italian seasoning. Toss until evenly coated.

      Sauté Zucchini: In a large skillet, heat over medium heat and add the seasoned zucchini. Sauté for about 3-4 minutes until they are just tender. Remove from heat and set aside.

        Prepare Pitas: On a baking sheet, lay out the whole wheat pitas. Spread an even layer of marinara sauce over each pita, leaving a small border around the edges.

          Add Toppings: On top of the sauce, sprinkle a generous amount of shredded mozzarella cheese. Evenly distribute the sautéed zucchini, cherry tomatoes, black olives, and red onion over the cheese.

            Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cheese is bubbly and golden, and the pitas are crisp.
