2 medium zucchinis

1 cup grated sharp cheddar cheese

1/2 cup breadcrumbs (preferably whole wheat)

1 large egg

1/4 cup finely chopped green onions

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon salt

1/4 teaspoon black pepper

Cooking spray or olive oil for greasing

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray or olive oil.

    Prepare the Zucchini: Wash the zucchinis and cut off the ends. Grate them using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out excess moisture. This is crucial for getting crispy tater tots!

      Mix the Ingredients: In a large mixing bowl, combine the squeezed zucchini, cheddar cheese, breadcrumbs, egg, green onions, garlic, onion powder, garlic powder, salt, and black pepper. Stir until everything is well combined.

        Shape the Tots: Using your hands, take a small amount of the mixture (about 1 tablespoon) and shape it into a small oval or rectangular shape, resembling a tater tot. Repeat until all the mixture is used.

          Bake: Place the shaped zucchini tots on the prepared baking sheet, ensuring they are spaced evenly apart. Lightly spray the tops with additional cooking spray or drizzle with a bit of olive oil for extra crispiness.
